Easy Mashed Sweet Potatoes with Chipotles and Honey
These super easy mashed sweet potatoes take about 15 minutes to prep and cook. This is a fast, flavorful, and healthy vegetable side dish recipe. It's sure to become a favorite.
1 ½lbssweet potatoespeeled and cut into ~2-inch chunks
1tbspbutter
1cannedchipotle pepperfinely minced
½tbspadobo sauce (from the can of chipotle peppers)
1tbsphoney
½tspsalt
Instructions
Place the sweet potatoes in a medium pot and cover with water. Add a pinch of salt. Set over medium-high heat, cover, and bring to a boil. Once the water is boiling, you can uncover so that the water doesn't boil over.Boil sweet potatoes until tender, about 8-10 minutes. To check for tenderness, pierce a steak knife into one of the larger chunks of potatoes. If it goes through easily, your sweet potatoes are done.
Drain the sweet potatoes and return them to the pot. Add the butter, chipotle pepper, adobo sauce, honey, and salt.
Mash with a potato masher until they reach your desired texture. I like them mostly mashed with a few chunks.Taste and season with more salt if you'd like.
